Mexican Taco Lettuce Cups

This gluten-free meal packs in the veggies and the protein. You can also mix up the toppings a bit to use what you have on hand.

Steak Salad

If you crave a good, hearty steak, this salad is for you! And you don’t even have to throw a new steak on the grill! Use leftover steak from the fajitas or another meal to save yourself some time. A homemade raspberry vinaigrette is a perfect pairing.

Peanut Butter and Chocolate and Steel-Cut Oatmeal

As the weather starts to cool down, this morning treat will warm the bellies of everyone in your house. Make it ahead or cook it the morning of—either way, it’s sure to please! I’m just glad that the recipe made 4 servings, because by the time it was ready, there were more mouths waterings than just mine. A great way to get kids to eat their oatmeal!

    The oatmeal looks amazing! I’m not great at eating breakfast, but I would eat that every day!

    Wow, the lettuce tacos looks really good. I’m sure I would be able to convince my husband to change his diet if I make him this steak salad.
