Crock Pot Recipes – 5 Dinners & 2 Desserts

There are so many great (and healthy!) recipes you can make using a crock pot. Not only does it save time, it also saves on having multiple pots and pans to clean when the meal is ready! Here are a few of my recent crock pot recipe finds.

There are 5 main course recipes and 2 dessert recipes (because, well… you know, dessert!).

Main Courses

Skinny Pineapple Salsa Chicken

Ingredients

  • 2 lbs boneless, skinless chicken breast
  • 2 cups organic salsa your choice: hot, medium or mild
  • 3 zucchini, diced
  • 20 oz. can pineapple chunks in 100% juice reserve juice
  • 3/4 cup pineapple juice from can

Optional

  • jasmine or brown rice, quinoa or sprouted whole grain tortillas
  • shredded mozzarella cheese
  • green onion

Instructions

  • Place chicken breasts in the bottom of your slow cooker.
  • Cover chicken completely with salsa.
  • Cook on low for 6-8 hours. Depending on how much liquid is expelled during the cooking process, you may need to drain some liquid before the next step...shred chicken.
  • One hour before serving, chop the zucchini into bite-size pieces and add to the chicken mixture.
  • Drain the pineapple juice into a separate bowl. Add pineapple to the slow cooker and 3/4 cup of juice.
  • Serve on tortillas or with your favorite side dish!

 

Clean Eating Crock Pot Orange Chicken

Ingredients

  • 4 boneless, skinless chicken breast chopped into cubes
  • 1 cup real or fresh-squeezed orange juice
  • 1/4 cup raw organic honey
  • 1 tsp marjoram
  • 2 small oranges

Instructions

  • Add the chicken breasts to the crock pot.
  • Mix the other ingredients together and pour over the chicken.
  • Cook on low for 6 hours or high for 3.
  • Open the orange and add the segments into the pot and stir.
  • Cook for a further 15 minutes.
  • Serve over rice, couscous or quinoa.

 

Crockpot Pork Tenderloin

Ingredients

  • 2 pounds pork tenderloin or two small tenderloins
  • 1/4 cup Bragg's Liquid Aminos a healthy substitute for soy sauce
  • 1.5 tsp yellow mustard
  • 2 T olive oil
  • 3 T pure maple syrup
  • 1 shallot chopped
  • 1 tsp onion powder
  • 1.5 tsp garlic powder

Instructions

  • Turn crock pot on to low.
  • In large measuring cup, add all the ingredients for the marinade and mix.
  • Place tenderloin in the crock pot. Pour marinade over tenderloin.
  • Cook on low for about 5 hours for two small tenderloins or 6 hours for one large piece.
  • Slice and serve pouring the juices over the meat.
  • Recommended but not necessary: Turn the pork twice to ensure even cooking at 2 hours and 4 hours, pouring the juices all over

Notes

Serve with roasted sweet potatoes, a leafy green salad or any veggie of choice.

 

Slow Cooker Beef Stew

Ingredients

  • 1 pound round steak cut into 1-inch pieces
  • 2 T olive oil flavored olive oil works well: basil, rosemary or garlic-chile pepper
  • 1 large white onion chopped
  • 2 tsp minced garlic
  • 2 cups potatoes cut into 3/4 inch chunks
  • 4 celery sticks cleaned and chopped
  • 2 carrots peeled and chopped
  • 1.5 tsp dried thyme or 1 T fresh thyme
  • 3 bay leaves
  • 2 cups beef broth
  • 1 cup red wine
  • 1 can (14.5 oz) diced tomatoes

Instructions

  • Rub the meat with oil, salt and pepper. Let it sit at room temperature while preparing the other vegetables.
  • Prepare all vegetables and add them to the slow cooker.
  • Place round steak on top of veggies.
  • Add the broth, wine, tomatoes, thyme, bay leaves, and a little salt and pepper.
  • Cover the slow cooker and cook on low 8 hours, or until the meat is fork tender.

Notes

Recommend a 4-6 quart slow cooker.

 

Slow Cooker Beef and Broccoli

Ingredients

  • 1 pound boneless chuck roast sliced into thin strips
  • 2-3 cups fresh broccoli florets
  • 1 apple thinly sliced
  • 1/2 cup beef stock
  • 1/3 cup coconut aminos found on Amazon, Whole Foods or other health food stores as fruitful yield
  • 1/3 cup Raw honey
  • 3 cloves garlic minced

Instructions

  • Combine together the beef stock, coconut aminos, honey, garlic and sliced apple in the slow cooker.
  • Add the beef and stir.
  • Set slow cooker to low and cook for 4 to 5 hours.
  • Add the broccoli and cook for another 30 min.

Desserts

Crock Pot Pumpkin Pie Pudding

Ingredients

  • 3 T melted coconut oil or butter
  • 3 cups pureed pumpkin
  • 2 cups coconut milk You can use full fat or light, preferably from a can.
  • 3 eggs
  • 1/3 to 1/2 cup natural sweetener of choice I used a mixture of palm sugar and maple syrup
  • 2 tsp pumpkin pie spice
  • 1.5 T vanilla extract
  • 3 T coconut flour
  • 1 tsp baking powder

Instructions

  • Use a little of the melted coconut oil or butter to grease the inside of the crock pot.
  • Then add all ingredients and stir to combine. If you want a really even, creamy texture you can whip it all up in a blender or use a stick blender right in the crock pot first. I just used a lot of elbow grease until the pumpkin lumps were smoothed out.
  • Cover crock pot and cook on low for 6-8 hours. Pudding will get a crust on top and start to brown on edges (as shown below), but still be pudding-like underneath.

Notes

You can serve with raw walnuts, pecans or even some shredded unsweetened coconut on top.  Have this as a dessert or as a breakfast.

 

Crock Pot Cinnamon Honey Buns

Ingredients

Dough

  • 1/3 cup coconut flour
  • 3 eggs
  • 1/2 tsp baking soda
  • 5 T coconut oil or grass-fed butter
  • 2 T Honey
  • dash salt

Topping

  • 1 cup Honey
  • 4 T coconut oil or grass-fed butter melted
  • 1 T Cinnamon

Instructions

  • Mix all of the dough ingredients together until it reaches a good consistency.
  • Next form into 7-8 medium sized balls of dough.
  • After the balls of dough are formed, melt the butter, and mix that with the honey and cinnamon.
  • Dip each dough ball into the topping mixture and place into the crock pot.
  • If you have a large crock pot, you will want to double the recipe for the dough, but not the topping. You will have plenty. If you have a smaller crock pot, the amount of dough should be fine and you can pour the unused topping over the dough balls.
  • Cook in crock pot on low for 1 to 1.5 hours.
