Mexican Quiche
I found this recipe online, then modified it meet my family’s tastes (the kids weren’t a fan of the jalapenos!). Thank you to The Girl Who Ate Everything for the inspiration!
Mexican Quiche
Ingredients
- 1 10-inch flour tortilla
- 1 rotisserie chicken or shredded boneless, skinless chicken breast
- 2 cups shredded cheddar cheese
- 2 eggs
- 1 cup whole milk
- 1 cup all-purpose flour
- 1 tsp baking powder
Optional
- 1/2 cup chopped cilantro
- 1/3 cup diced jalapenos
Instructions
- Preheat oven to 450 degreesGrease 9-inch pie platePress tortilla into pie plate and spray with cooking spray
Create Filling
- Toss chicken, 1 cup cheese, 1/2 teaspoon salt and pepper + optional cilantro and jalapenos (if desired) in a large bowl until combined.Spread over tortilla.
Prepare Topping
- Whisk eggs, milk, flour, baking powder and 1/2 teaspoon salt in bowl until smooth.Slowly pour over filling and sprinkle with remaining cheese.
Bake and Enjoy
- Bake until golden brown, about 16-20 minutes. Knife should come out clean when inserted into the center.Let cool 5 minutes.Cut into wedges and serve.
