Mexican Quiche

I found this recipe online, then modified it meet my family’s tastes (the kids weren’t a fan of the jalapenos!). Thank you to The Girl Who Ate Everything for the inspiration!

Mexican Quiche

Ingredients

  • 1 10-inch flour tortilla
  • 1 rotisserie chicken or shredded boneless, skinless chicken breast
  • 2 cups shredded cheddar cheese
  • 2 eggs
  • 1 cup whole milk
  • 1 cup all-purpose flour
  • 1 tsp baking powder

Optional

  • 1/2 cup chopped cilantro
  • 1/3 cup diced jalapenos

Instructions

  • Preheat oven to 450 degrees
    Grease 9-inch pie plate
    Press tortilla into pie plate and spray with cooking spray

Create Filling

  • Toss chicken, 1 cup cheese, 1/2 teaspoon salt and pepper + optional cilantro and jalapenos (if desired) in a large bowl until combined.
    Spread over tortilla.

Prepare Topping

  • Whisk eggs, milk, flour, baking powder and 1/2 teaspoon salt in bowl until smooth.
    Slowly pour over filling and sprinkle with remaining cheese.

Bake and Enjoy

  • Bake until golden brown, about 16-20 minutes. Knife should come out clean when inserted into the center.
    Let cool 5 minutes.
    Cut into wedges and serve.
